Smoked queso dip is a simple but incredibly tasty dip that is perfect for parties and BBQs. This delicious cheese dip recipe is made with only a few ingredients and can be made in under 15 minutes. This is my version of a smoked chilli con queso. It’s not made in a smoker, but given that intense smoky flavour from the smoked paprika. This recipe can be made ahead of time and can be whipped up in a flash.

What is Chilli Con Queso?

Queso means cheese so it goes without saying that this recipe for smoked queso dip has cheese front and centre. Originating in Mexico, Chilli Con Queso has become a modern blend of a few authentic Mexican dishes. Usually made with yellow or white cheese, common types are Monterey Jack, Asadero and various cheddars. It always includes capsicum (peppers).

Ingredients

It couldn’t be any easier to make this dip, with only a handful of ingredients required.

  • Small amount of oil, approx 1-2 teaspoons
  • 1 capsicum (pepper), finely diced
  • 1 small onion, finely diced
  • Minimum 1 tbsp jalapeno chillies, chopped finely
  • 1 clove of garlic, crushed
  • 1 spring onion, sliced finely
  • 1 tin diced tinned tomatoes
  • 250 grams cream cheese
  • 2 heaped teaspoons of smoked paprika (at least)
  • Ground chillies
  • Chilli, chopped finely

Note: You can use any type of oil you like but make sure it had a mild flavour so as to not influence the other ingredients. This chilli con queso recipe can take as much heat as you want to give it, which is why I haven’t given a lot of measurements for them above. I do recommend just adding these ingredients slowly and tasting often, to ensure that the spices cook out properly and that you can test the level of chilli for your taste.

How to make smoked queso dip

This recipe can be made in a matter of minutes and it’s ready to eat immediately.

Heat the oil in a medium saucepan and cook the onion, spring onion, capsicum, chilli and garlic until the onion becomes transparent. Add the spices and mix through well.

Taste test along the way to ensure you have the correct level of smokiness and heat.

Add the tinned tomatoes and mix through thoroughly.

Add the cream cheese and stir until it becomes smooth.

Note: Mixing in the cream cheese is much easier if you use it at room temperature. Even then, it can be a bit tricky mixing with a whisk. If this is the case, use a wooden spoon first until it is broken down and then use a whisk for the final step.
